Pizza is just stinkin' good, and really a very cheap eat when you make it yourself. One of just the many wonderful things about pizza is that you can top it with pretty much anything you've got lying around. If you want to make several crusts at once, just double, triple, or quadruple this recipe, which just makes one crust. To parbake your crusts, bake them for 10-15 minutes, cool on towels or a wire rack, wrap in plastic wrap, and freeze until you need them. When you're ready to make pizza, just remove from the freezer, unwrap, add your toppings, and bake for 10-15 minutes, or until everything is hot and any sauce or cheeze is bubbling.
- 2 cups flour
- 9 tablespoons oil, melted margarine, applesauce or a combination
- 1/2 teaspoon salt
- 1 tablespoon dried oregano (optional)
- 1 tablespoon dried basil (optional)
- 1/3 cup ice cold water
Combine the flour, oil/margarine/applesauce, salt, and herbs, if using. Mix together with your hands until everything is just combined (it will be a little crumbly and lumpy. Now add the cold water a little at a time until you have a smooth, kneadable dough. Roll or pat your crust into a 6-inch disk on lightly oiled pizza pan or cookie sheet. Chill in the fridge for 20 minutes. Prick the crust with a fork and bake at 400F for 10-15 minutes. At this point, you can either add your toppings and bake for another 10-15 minutes or you can let it cool completely on a rack or towel, wrap in plastic wrap and freeze until you need it.
