Margaret and Jennifer, age 3, vegans

Margaret and Jennifer are twin nurslings. Sarah, their mother, is a 32-year-old vegetarian.


Margaret

Early morning: nursed

Breakfast: fruit smoothie (soymilk, frozen banana, frozen strawberries), 1/2 slice toast with cashew butter, water.

Morning snack: a bunch of pistachios, 8 oz orange juice, small bowl of applesauce

Lunch: small bowl of potato soup, a few bites of a 7-grain dinner roll with olive oil spread, a dozen or more grapes, water

Snack: carrot sticks, hummus, vegetable-flavored crackers

Snack: frozen fruit bar

Dinner: A LOT of vegetarian lasagna (whole wheat noodles, tomato sauce, soy mozzarella, crumbled Boca burgers, broccoli, carrots), salad (romaine, green leaf lettuce, green peas, tomatoes, black olives, sunflower seeds) with poppy seed dressing, 1/2 slice of whole wheat bread with olive oil spread, water

Bedtime snack: Tofutti Cutie, rice milk

Jennifer (currently teething)

Early morning: nursed

Breakfast: a half cup of fruit smoothie (soymilk, frozen bananas and strawberries), licked some cashew butter off of a 1/2 slice of whole wheat toast (but did not take a bite of the toast!)

Morning snack: pistachios, orange juice, two bowls of applesauce

Lunch: bowl of potato soup (potatoes, carrots, celery, onions, garlic, soymilk, soy cheddar), a few bites of a 7-grain dinner roll, lots of grapes, water

Afternoon snack: carrot sticks, hummus, vegetable flavored crackers, nursed

Snack: three frozen fruit bars

Dinner: large serving of vegetarian lasagna (whole wheat noodles, tomato sauce, herbs, soy mozzarella, crumbled Boca burgers, broccoli, carrots), salad (romaine, green leaf lettuce, green peas, black olives, sunflower seeds) with no dressing, a few bites of whole wheat bread with olive oil spread, water.
